Beef stock OXO potatoes are a great alternative to beef dripping roast potatoes and, in my opinion, have more flavour! Also, they only use the fat from a few sprays of Fry Light. Don't get me wrong, they're not identical to goose fat roast potatoes (although, I embrace them on my Christmas dinner).
But I think OXO roasties are halfway there for an everyday healthy meal. They have a crispy bite with a fluffy centre. And they're very easy roast potatoes to make. Let me show you how.
How to Make Healthy Roast Potatoes

- 3 large potatoes (1kg), peeled and quartered
- 2 OXO cubes
- Pan of water, brought up to the boil
- 300ml boiling water
- Fry Light or similar oil spray
- Sea salt
Optional Herbs for Roast Potatoes
- 1 bay leaf
- Sprig of rosemary or thyme
How to Roast Potatoes in the Oven with OXO
- Preheat your oven on: 210c fan / 230 celcius / gas mark 8 / 450f
- Bring a large pan of water to a boil
- Add the peeled and quartered potatoes and parboil for 5 minutes if making roast baby potatoes, or 10 minutes if making large roast potatoes
- Transfer to a roasting tin or baking dish, including optional bay leaf and rosemary or thyme
- In a jug, make the beef stock with OXO and together with 300ml of boiling water, then pour over the potatoes
- Spray with oil, season with sea salt and bake in the oven for 40 minutes to 1 hour, until the potatoes have soaked up all the oxo and they crisp up on the edges
- Finally, season the roast potatoes if you wish
What Other Methods Can I Cook Slimming OXO potatoes?
Alternative ways to make this Slimming oxo roast potatoes recipe are:
- In an airfryer and make Actifry roast potatoes in an in the same way for around 20 to 30 minutes. For a Philips airfryer , you'll need a special baking dish inside as opposed to the basket and bake for around
- It doesn't have to be OXO. You can make Bisto potatoes by doing everything the same, except use a Bisto beef stock melt with 300ml of boiling water
- You could also use other homemade beef stock with other cubes
- Make vegetarian Marmite roast potatoes using 2 tbsp with 300ml water

- Spray oil
- 1 kg potatoes peeled & quartered
- 300 ml boiling water
- 2 oxo beef stock cubes
- Fine sea salt
Optional
- 1 bay leaf
- Sprig rosemary or thyme

Preheat your oven at 210c fan / 230 celcius / gas mark 8 / 450f

Bring a pan of water to the boil.

Add the potatoes and boil for 5 minutes if using small potatoes, 10 minutes if larger.

Mix 300ml of boiling water with the oxo and pour on top of the potatoes.
